Half Dipped Bitesize Ginger Biscuits

Chocolate Peppermint Bars

This week's blog post is for these refreshingly cool Chocolate Peppermint Bars. The process of making these was quite similar to making caramel squares as they have the same three components; a biscuit base, filling and a melted chocolate top. The taste of these bars was reminiscent to After Eights and I thought they were delicious!

My Go-To Biscuit Dough (and Flooding Technique)
Hello Everyone!
This week's blog post is the third in my series of "Go-To" posts and it's for my go-to biscuit dough. I use this recipe whenever I'm making what I like to call decorative biscuits i.e I'm going to be flooding biscuits. This is a really nice recipe and depending on your cookie cutter size, it makes about 25 biscuits. The dough also doesn't spread a lot in the oven so the biscuits don't lose their shape, which I know is a very important factor when making intricately shaped biscuits.

Biscuit Week
Hello Everyone!
This week's blog post was composed over an entire week as it's Biscuit Week! There were two main things that inspired me to make this post and partake in Biscuit Week:
1. The Great British Bake Off has returned to TV screens for its sixth season and week two was Biscuit Week for the contestants. As a fan of GBBO and biscuits I felt it was only right to have my own Biscuit Week.
2. At the beginning of the year I went through the majority of my recipe books and bookmarked everything that I hoped to bake before the year is over. Looking at the amount things I had bookmarked I thought the only way that I could complete a reasonable chunk in a short space of times was to set aside a week dedicated to baking a certain category. Hence I decided to start with a Biscuit Week.
So let's get started with 7 days, 7 biscuits...

M&M Illusion Chocolate Cake
Hello and welcome everybody to my first step-by-step blog post!
This post is for an M&M illusion cake inspired by Amerikanisch Kochen. I made this cake for my sister's birthday and as her favourite sweets are M&Ms, I omitted the Malteasers from the cake. This cake was a bit tricky to decorate at times but I think the end result was worth all of the time and effort.

Yo-Yo Biscuits
Hello Everyone!
This week's blog post is for Yo-Yo Biscuits. This was my first time making these and I will definitely be making them again! They were so simple and quick to make, yet the end result was absolutely delicious. They had a light texture and melted in your mouth. Yum!
The recipe that I used was from 'Something Sweet', which is a weekly baking magazine published by De Agostini. The magazine is available in all good newsagents (Ireland) and online.
The only minor adaption that I made to this recipe was changing the flavours.

Red Velvet Mini Heart Cakes with Cream Cheese Frosting

Today's blog post is for these adorable red velvet mini heart cakes with cream cheese frosting in the middle.
I used a recipe for red velvet cupcakes from 'The Hummingbird Bakery Cookbook' but instead of making traditional cupcakes I used a silicone heart-shaped mould to make twelve hearts. I then levelled these hearts to make six red velvet heart sandwiches. This is a great recipe to make any time you fancy but I also think that it would be particularly nice around Valentine's Day.
These cakes were the result of some trial and error as the first time I made them they were quite disastrous.
First attempt: I overfilled the mould which resulted in extremely lumpy-topped hearts (tasted good but weren't too visually pleasing). They also didn't pop out of the mould as easily as I would have expected. This was probably due to the fact that I didn't grease/ line the mould. The reason for this was that I never normally grease any of my silicone bakeware but the baked goods always manage to pop right out. Therefore I was a bit disappointed as half of my cakes ended up stuck to the bottom of the mould :( If you decide to purchase this mould I recommend that you grease it with some butter or nonstick spray to try and save your cakes.
Second attempt: I didn't overfill the mould and remembered to grease it, which resulted in the cakes you will see below.

Banana & Chocolate Cupcakes
HELLO EVERYONE!!
Welcome to my first ever blog post! I decided to bake these delicious banana & chocolate cupcakes as I had a handful of bananas sitting in the fruit bowl that were in need of some loving. I was flipping through some recipe books when I spotted this recipe and I knew that it was ideal for my 'mature' bananas.
