Half Dipped Peppermint Cookies

Hi Everyone!
I'm back this week and I am of course kicking off the Christmas blog posts! The first one is for these chocolate cookies that have been half dipped in glace icing and sprinkled with crushed candy canes.
So let's get started...



You will need:
  • 125g butter
  • 175g caster sugar
  • 1 egg
  • 0.5tsp vanilla
  • 125g plain flour
  • 35g cocoa powder
  • 0.5tsp bicarbonate of soda
  • lined cookie tray
  • mini ice-cream scoop
  • 130g icing sugar
  • 8tsp water
  • 2 candy canes
1. Preheat your oven to 180°C/ gas mark 4

2. Beat your butter and sugar together

3. Add the egg and vanilla

4. Mix in the flour, cocoa powder and bicarbonate

5. Use a mini ice-cream scoop to place the balls of dough onto the tray, spacing them well apart. A mini ice-cream scoop is my go-to when placing cookies as it creates a perfectly round shape. If you want the biscuits to be bigger you can use two scoops for every one biscuit

6. Place in the oven 10 minutes

7. When the biscuits are out of the oven and have started cooling you can make the icing. To do this you need to mix your icing sugar and water together until smooth. You can add more or less water depending on how thick/ runny you want the icing to be :)


8. Place about two candy canes into a food processor and whizz them until they're little crumbs. If you don't have a food processor you can put them into a bowl and smash them with a fondant rolling pin or something or similar strength , but trust me this takes quite a bit of effort and time! It's super important that you get the pieces small so people aren't breaking their teeth on the biscuits

9. Take your biscuits and half dip them into the icing. You might want to do this twice to get a more opaque look on the icing

10. While the icing is still wet you can sprinkle the candy cane pieces on top
