Yo-Yo Biscuits


Hello Everyone!
This week's blog post is for Yo-Yo Biscuits. This was my first time making these and I will definitely be making them again! They were so simple and quick to make, yet the end result was absolutely delicious. They had a light texture and melted in your mouth. Yum! 
The recipe that I used was from 'Something Sweet', which is a weekly baking magazine published by De Agostini. The magazine is available in all good newsagents (Ireland) and online
The only minor adaption that I made to this recipe was changing the flavours.
Let's get started...


The ingredients needed for the biscuits; butter, self-raising flour, cornflour, caster sugar and some vanilla essence.
The original recipe uses the zest of an orange instead of the vanilla.

The equipment needed for the biscuits; KicthenAid, weighing scales, mini ice-cream scoop, a spoon, a fork and a lined baking tray.

I find the mini ice-cream scoop perfect for making small and similar sized balls of dough. I couldn't find the exact scoop that I own online but I found a similar if you're interested in purchasing one.
Once you have your little dough balls on your tray, you need to use the fork to flatten them and leave an imprint. To prevent the fork sticking to the dough you can dip the fork in some cold water. 

Once the biscuits have baked you can still see the imprint, which gives them a cute and rustic look.


Next step is the buttercream icing...

The equipment needed for the buttercream; KitchenAid with the whisk attachment, weighing scales and a spoon.

The ingredients for the buttercream; lemon juice, icing sugar and pink food colouring.
I made another flavour adaption here as the original recipe calls for raspberry flavouring.

To pipe the icing onto the biscuits I used a french star nozzle and a disposable piping bag.
 

As I used a gel food colouring it only took a few drops to achieve this vibrant pink colour.

 
To ice the biscuits I did a simple swirl in the centre of one biscuit and then sandwiched another one on top to create the biscuit sandwich.
