Mixed Fruit Amaretti Biscuits


Hello Everyone! This week's blog post is for Mixed Fruit Amaretti Biscuits. These little biscuits were quick and easy to make and are also naturally gluten and dairy free. The recipe that I used is from a weekly baking magazine, 'Something Sweet'. 




 The equipment needed; KitchenAid, weighing scales, lined baking tray, a spoon, mini ice-cream scoop, a fork for transporting the cookies from the tray to the cooling rack.



The ingredients needed; caster sugar, eggs, ground almonds, dried fruit mix and vanilla.
 The original recipe called for only dried cranberries, but as my local shop only had a mix I used this instead. The mix consisted of dried cranberries, raisins and golden raisins.

These biscuits had a few steps so they took hardly any time!
 Here's the biscuits before they went into the oven. It's quite a wet mixture but it can also hold its shape. To get a uniform shape and size with these biscuits I like to use a mini ice-cream scoop (a kitchen essential in my opinion!). 

The biscuits were also only in the oven for about 10mins so they're quick and easy.

Even though there was no coconut in these biscuits, they tasted like they were lightly coconut flavoured. They were crisp on the outside but chewy and soft on the inside. I would recommend trying out these biscuits and I think they would be even more delicious sandwiched together with some vanilla ice-cream, yum :)
If you have more of a sweet tooth you could replace the mixed fruit with chocolate chips - the combinations are endless!
