Hello Everyone!
I know that it's been a very, very long time since I last posted; my only excuse is that I've been trying to find a balance between work, study, free time and baking. This balance has been a bit uneven but I'm hoping that the new year and the end of exams will get me back on track :)
Now, today's post is for these adorable Christmas reindeer biscuits. They're quick and easy to make, making them the perfect last minute Christmas treat
So let's get started...
You will need:
- 225g butter
- 140g caster sugar
- egg yolk
- 1tsp vanilla extract
- 280g plain flour
- 1tsp ground cinnamon
- 0.5tsp all spice
- pinch of salt
- chocolate writing icing
- M&Ms
2. Beat the butter and sugar together until light and fluffy
3. Add the egg yolk and vanilla, and beat again
4. Lastly, add the dry ingredients; flour, cinnamon, spice and salt, and mix until you have a combined dough
5. Roll out the dough and use a 2.5" circle cookie cutter to shape the biscuits
6. Bake in the oven for 14 minutes, placing the dough apart to allow room for flowing
7. Remove from oven and allow to cool on a wire tray
8. Once cooled, place two blobs of writing icing onto each biscuit for the deers' eyes
9. Place a slightly larger blob in the bottom centre and place a red M&M for the nose, alternatively you can use brown M&Ms to make reindeers instead of Rudolph
10. Draw on two antlers with the writing icing
