To celebrate the start of summer I've made these 99 ice-cream inspired cupcakes. These cupcakes are super simple to make and they end up looking absolutely adorable; perfect for any summer festivities that you may be attending.
So let's get started...
You'll require:
- 175g buter
- 157g caster sugar
- 1tsp vanilla extract
- 3 eggs
- 150g self rasing flour
- ice-cream scoop
- 135g butter
- 0.5tbsp milk
- 195g icing sugar
- 6 flakes, cut in half
- 1M piping nozzle
- sprinkles
2. Beat together 175g butter, 175g caster sugar and vanilla extract together until light and fluffy
3. Mix in one egg at a time until combined, then add the flour and mix until you have a smooth mixture
4. Taking an ice-cream scoop, place one scoop into each cupcake case and disperse the remaining mixture amongst each case, in total I made 12 cupcakes
5. Bake in the oven for approx 22minutes until the cupcakes are golden brown and springy to touch
6. Remove the cupcakes from the oven, place on a wire cooling tray and then it's time to make the icing
7. Beat together 135g butter, 0.5tbsp milk and 195g icing sugar until a smooth and creamy icing forms
8. Cut each chocolate flake in half, this will help to make the cupcakes look more proportional
9. Fill a piping bag, fitted with a 1M tip, with the icing and pipe away, I did a simple swirl to replicate a 99. Stick the flake into the icing
10. Lastly, add some sprinkles
And you're done!
