Mini Baked Cake Donuts


Hi Everyone!
This week's post is for mini cake donuts which are both simple and quick to make. Depending on how you choose to decorate these donuts, you can create either quite a striking or quite a subtle product. Also as these donuts are mini, they take much less time to decorate, saving time between the baking and eating of them ;-) 
In addition to this week's blog post, I can confirm that I am now officially back to my usual weekly Sunday posts! Wooo!
So let's get started...

You will need:
  • 25g melted butter
  • 125g self raising flour
  • 0.5tsp baking powder 
  • 25g caster sugar
  • 1 egg
  • 75ml milk
  • 0.5tsp vanilla
  • mini donut tray
The size of your donut tray will dictate how many donuts you can make from this recipe, mine was quite small, resulting in 27 donuts

1. Preheat the oven to 190°C and melt your butter

2. Mix the dry ingredients, flour, baking powder and sugar, together in a bowl


3. In a separate bowl beat together the egg, milk and vanilla

4. Pour the wet ingredients into the centre of the dry ingredients, add the melted butter and mix to form a thick batter


 5. Fill a piping bag with the batter and pipe it into each of the donut rings


6. As my donuts were quite miniature they only took 10 minutes in the oven, so make sure to keep an eye on yours and check them at the 10 minute mark

7. When your donuts are finished baking, allow them to cool a bit in the tray before moving them to a wire cooling tray

8. Once the donuts are cooled, it's time to make the icing

9. Place 90g icing sugar into a bowl and add 4.5tsp of water, one spoonful at a time

10. You can now add colouring of your choice, I chose to split the icing into two bowls so that I could use two colours. I used Dr. Oetker "Pink" and ProGel "Lemon"

11. Dip each donut into the icing and decorate however you please; dots, stripes, swirls etc.
