This post is pretty much the result of having too many ripe bananas in my kitchen :) As this recipe has bananas and eggs in it, it resulted in quite cakey cookies, but I'm not complaining as they still taste amazing! As these cookies have both fruit and oats in them, I like to tell myself that they're healthier than your average cookie (so you can justify eating the half the batch right?)
So let's get started...
You will need:
- 2 bananas
- 200g butter
- 200g brown sugar
- 2 eggs
- 200g plain flour
- 5g baking powder
- 100g porridge oats
- 200g chocolate chips
2. Chop the bananas into medium sized chunks and lightly beat them with a mixer
3. Add the butter, sugar and eggs and mix again
4. Add the flour, baking powder and oats until all the ingredients are combined
5. Lastly stir in the chocolate chips by hand
6. I then used an ice-cream scoop to place the mixture onto the tray, spaced well apart, and I baked the cookies for about 12minutes. You'll know the cookies are ready to come out when they're started to turn light brown on the edges
This recipe made 21 ice-cream scoop sized cookies
7. You can transfer the cookies to a wire rack to cool, or enjoy them straight from the oven
