HELLO EVERYONE!!
Welcome to my first ever blog post! I decided to bake these delicious banana & chocolate cupcakes as I had a handful of bananas sitting in the fruit bowl that were in need of some loving. I was flipping through some recipe books when I spotted this recipe and I knew that it was ideal for my 'mature' bananas.
The recipe that I used is from "The Hummingbird Bakery Cookbook". (you can click here if you're interested in purchasing this book)
The equipment that I needed for the cupcakes; lined cupcake tray, weighing scales, measuring spoons and my KitchenAid (or whatever mixer you own).
The ingredients for the cupcakes; flour, sugar, baking powder, cinnamon, ginger, salt, butter, milk, eggs and bananas.
Because this isn't a step by step tutorial I simply have a couple of pictures of the different stages:

Because of the amount of bananas that I had I made a batch and a half of the mixture. The recipe states that a batch will make 12 cupcakes, so I was expecting to make about 18. However I ended up with 36!
I also noticed that after I removed the cupcakes from the oven they had sunk a little in the middle. Not to worry as this can be easily disguised by the frosting.For the frosting I needed; my KitchenAid with the whisk attachment (or again whatever mixer you own), weighing scales and a spoon.
I only required a few ingredients for the frosting; icing sugar, milk, butter and cocoa powder.
To pipe the frosting I used a 1M tip and did a simple swirl.

ReplyDeleteHi! I wanted something food related (for obvious reasons) but I also wanted something beginning with N because that's what my name begins with. I thought of a couple different names and then Nimble Nibbles came to me and I decided it was perfect :) thanks for reading!
