Coconut Bars


Hi Everyone!
Welcome to this week's post, I like to tell myself that this one is healthy as it has coconut in it...but in reality it is quite the opposite. Today I am making these three layer coconut bars and they are de-lic-ous
So let's get started...




You will need: 

              Base:                                                             Coconut Topping:          
  • 250g plain flour                                     - 125g butter                      - 30g plain flour
  • 125g butter                                            - 60g caster sugar              - 2 handfuls milk chocolate
  • 63g caster sugar                                    - 120g golden syrup
  • 32g water                                              - 200g desiccated coconut
  • jam                                                        - 2 eggs

The first thing to do is make the pastry base as it needs to chill in the fridge for 15-30 minutes before use:


1. Chop the butter up into small pieces and add it to the flour. Rub the butter and flour together with your fingertips until the mixture resembles breadcrumbs

2. Stir in the sugar, then add the water and mix until a smooth dough starts to form

3. Wrap the dough in some clingfilm and chill in the fridge for 15-30 minutes

4. After the dough had chilled, remove it from the fridge and set aside until needed. 


Preheat the oven to 160C and let's start making the coconutty topping:

1. Melt the butter, sugar and golden syrup together in a saucepan over a medium heat


2. Once the ingredients are melted add the coconut and mix until it is completely coated. Then remove the mix from the heat

3. It is so important to let the mixture cool down a bit before adding the eggs. Adding the eggs into the hot mixture straightaway will cause them to curdle a.k.a not what we want!

4. While letting the mixture cool down, roll out the pastry to fit the base of a swiss roll tin. Dock the pastry (i.e. poke some holes in it) as this will allow the steam to escape


5. Take some jam; raspberry, strawberry, blackcurrant whatever you want! Spread an even layer of jam over the pastry base and set aside


6. Back to the coconut mixture, add the flour and give it a good mix

7. Next add the eggs, one at a time and mix until everything is well combined

8. Spread the coconut mixture on top of the jam and bake in the oven for approx. 30 minutes

9. Remove from the oven and allow to cool slightly before cutting. I made my bars 4cm wide and 11cm long


10. I then melted roughly two handfuls of chocolate and drizzled this over all of the bars

And you're finished!
