Lemon Drizzle Loaf


Hello Everyone!
This week's post is simple but an absolute classic. Inspired by The Great British Bake Off, I decided to make a lemon loaf, complete with a tangy lemon drizzle
So let's get started...

You'll need:
  • 100g butter
  • 175g self raising flour
  • 1tsp baking powder
  • 175g caster sugar
  • 2 eggs
  • 4 tablespoons
  • rind of one lemon
  • 2lb loaf tin
  • 8tsp icing sugar
  • juice of one lemon
1. Preheat the oven to 180°C, if you're not using a silicone tin it's best to grease the tin with some butter

2. Beat the sugar and butter together until incorporated and light

3. Add the eggs, flour, baking powder and lemon rind, and mix again until you have a lump-free, well combined mixture

4. Pour the mixture into the tin and pop into the oven for approx 30 minutes


5. When the loaf is out of the oven and cooling, you can make the drizzle by mixing the lemon juice and icing sugar together until smooth

6. Flood the drizzle onto the loaf and enjoy :)
