Easter Nests

Hi Everybody!
This week's post is my first Easter post! This recipe has kind of become a tradition in my house and I hope you will enjoy learning to make these delcious and colourful Easter Nests :)
So let's get started...

You will need:
  • 450g plain flour
  • 120g corn flour
  • 290g butter
  • 140g caster sugar
  • egg yolk
  • 100ml milk 
  • star shaped cookie cutter (that matches the size of the holes in the cupcake tray)
  • 75g butter
  • 150g icing sugar
  • pastel food colouring of your choice (I used Mint Green  by ProGel)
  • Candy coasted chocolate eggs (I used two of the family size packets)
1. Preheat your oven to 180°C and place small circles of silicone paper into a cupcake tray

2. Mix the flours and butter together until they resemble ground almonds

3. Add in the sugar, egg yolk and milk and mix until a smooth dough forms

4. Roll out the dough to approx 1cm thickness and cut out as many stars as you can with your cutter

5. Place the stars into the cupcake tray holes and press them down so that they reach the bottom and from a basket shape

6. Bake the nests for 10-15minutes, the tips will start to slightly brown before the base is fully baked, so keep an eye on them! I managed to make 18 nests from this recipe

7. When the nests are out of the oven and cooling, you can make the icing. To do this, mix together the butter, icing sugar and food colouring until smooth and creamy

8. Fill a piping bag with a 1M tip and the icing. I simply squeezed a mini swirl into each nest and placed 3 of the candy coated chocolate eggs on top
