Apple Spice Sandwich Biscuits



Hello Everyone!
Welcome back to my blog and welcome to my first autumnal post! Before Halloween bakes take over, I decided to ease into things with some simple posts centred around the flavours and colours of the season. As a result we have some spiced apple sandwich biscuits filled with an apple-custard sauce
So let's get started...

You will need:

  • 85g caster sugar
  • 115g butter
  • one egg yolk
  • 1tsp mixed spice
  • 1tsp cinnamon
  • 200g plain flour
  • 55g dried apples
  • 1tbsp caster sugar
  • 1tbsp custard powder
  • 125ml milk
  • 5tbsp apple sauce







1. Preheat your oven to 200°C and line a baking tray with some silicone paper

2. Cream together the butter and sugar until light and fluffy

3. Add the egg yolk

4. Shift together the flour, mixed spice and cinnamon, and add to the mixture

5. Cut your apple chips into small pieces then mix into the dough



6. Roll out your dough and use any cookie cutter you like to make the biscuits.  Remember that you'll need two biscuits to make one sandwich

7. Pop into the oven for about 10 minutes

8. Remove from the oven and place on a wire rack to cool


9. While the biscuits are cooling, prepare the filling: mix the sugar, custard powder and milk together in a saucepan and bring to the boil

10. Continue to stir the custard mix until thickened

11. Remove from the heat and add the apple sauce and leave to cool

12. Match the biscuits up to create the sandwiches, and spread the apple filling over one biscuit from each sandwich. Sandwich together



13. Optional step but you can also shift some cinnamon and icing sugar on top of the biscuits to give a festive look
