Mini Heart-Shaped Baked Raspberry Cheesecakes

Hello Everyone!
Welcome back to my blog; today's post is for a recipe that I've been trying to perfect for a while. Personally I'm not a fan of 'regular' cheesecake, but baked cheesecakes however are a completely different story. Whenever I come across a baked cheesecake, I have to try it! So for this post I decided to make my own mini & heart-shaped baked cheesecakes
So let's get started...



You will need:

  • heart shaped muffin tray
  • 75g oreos
  • 2 tbsp melted butter
  • 250g cream cheese
  • 75g sour cream
  • 88g caster sugar
  • 2 whole eggs
  • 1 yolk
  • raspberry sauce/ syrup
  • freeze-dried raspberry powder and grated dark chocolate for decoration


1. Place the oreos into a food processor and blast until completely crumbled. I put these into my NutriBullet and it worked just fine

2. Add the melted butter to the oreo crumbs and mix until all combined

3. Preheat the oven to 180˚C

4. Pour spoonfuls of the crumb mixture into each heart mould until they all have a base. How thick or thin the base is, is up to you and your preference. Press the crumbs into the base of each mould


5. In your mixing bowl, cream together the cream cheese, sour cream and caster sugar


6. Add the eggs to the cream mixture, one at a time, mixing between each addition

7. Pour the mixture into each heart mould, until three quarters to the top


8. Pop into the oven for about 35-45 minutes. You want the cheesecakes to be set and starting to brown

9. When finished baking, turn off the oven and leave the door slightly open to get the cheesecakes cool inside the oven

10. After about an hour of cooling, remove from the oven and it's time for decorating


11. As the cheesecakes dip a little upon setting, this makes them perfect for holding the raspberry sauce on top. Squirt some of the raspberry sauce on top, sprinkle some freeze-dried raspberry powder and grate some dark chocolate on top





And you're finished!

These cheesecakes are the perfect little treat, and the combination of the raspberry and cream is to die for!
