Raspberry & White Chocolate Blondies




Hi Everybody!

Today's post is a sweet one so don't say I didn't warn you! This week I used my favourite flavour combination, raspberry and white chocolate, to make some gooey and delicious blondies and it was a definite winner in my books
So let's get started...



You will need:
- 175g white chocolate for melting                          
- 75g white chocolate for chocolate chips                 - 2 eggs
- 75g butter                                                                 - 2.5g salt
- 125g caster sugar                                                     - 150g raspberries


1. Preheat your oven to 180C and line your baking tray with some silicone paper or grease it with butter. I used a 10x6.5" tray but anything similar will work just fine

2. Place the 175g of white chocolate into a bowl and melt

3. While the chocolate is melting beat together the sugar and butter until smooth

4. Add the eggs, flour and salt and mix until well combined

5. Once the chocolate is melted and has cooled slightly, add it to the mixture

6. Then by hand add the raspberries and chocolate chips very gently. If the raspberries burst their colour will bleed into the mixture which personally I prefer the look of




7. Pour the mixture into your tray and bake for approx 35 minutes, making sure to check it once it hits 30 minutes just in case. the top of the blondies should be firm to touch but the inside slightly gooey which will solidify a bit more upon cooling


8. I cut the batch of blondies down the middle lengthways and then cut them 5cm across. All that's left to do now is dig in and enjoy!
