Hello Everyone!
Welcome back to my blog; I was on a bit of a hiatus as I was temporarily living abroad and had no access to an equipped kitchen for baking :-(
However now I'm back to regular bakes and what better way to kick it off the making mini versions of an ultimate classic?
So let's get started...
For ingredients you will need:
- 200g butter - 100g butter
- 200g caster sugar - 200g icing sugar
- 4 eggs - Approx 2tbsp milk
-200g self- raising flour - Jam - whichever flavour you prefer
For equipment you will need:
- 7.5" square tray - Fancy icing nozzle for decorating the cake tops
- Mini triangle cookie cutter - Some fancy sugar decoration, I'd recommend Cake Angels
1. Preheat your oven to 180°C and line your baking tray if not using a silicone one
2. Cream together the sugar and butter until smooth
3. Mix in the eggs one at a time to avoid curdling
4. Add the flour and beat until there's no visible lumps in the mixture
5. Pour the mixture into your tray and bake in the oven for approximately 25 minutes, I'd recommend checking on your cake at the 20 minute mark!
6. When your cake has cooled down, use your cookie cutter to make mini triangles. Then cut the triangles in half to create two layers
7. Next you want to make the icing, you simply need to beat the butter and icing sugar together until creamy and smooth. You can add some milk one teaspoon at a time until you reach your desired consistency
8. On top of the bottom layer spread an even amount of jam, as little or as much as you please
9. Pop your icing into a piping bag and pipe it on top of the jam layer using a back and forth motion
11. If you want to take your mini sponges to the next level, use a fancy nozzle e.g. closed star, open star etc. and pipe a mini swirl on top and add a cute sugar decoration! I used some crown decorations from an older Cake Angels collection but they have plenty of adorable, readily-available decorations to choose from!
