Upside Down Toffee Apple Slices



Hello Everyone!
Welcome back to my blog, I hope that your new year is off to an amazing start. For my first post of 2018, I wanted to make something delicious and fuss-free. These upside down toffee apple slices were the perfect solution as once they are baked they need no further decorating (meaning you can tuck in straight away!)
So let's get started...





You will need:

Cake:                                                                                       Toffee Topping:
- 115g butter                                                                            - 85g dark brown sugar
- 175g dark brown sugar                                                         - 55g butter
- 2 eggs                                                                                   - 1 apple
- 200g plain flour
- 1tsp baking powder
- 0.5tsp bicarbonate of soda
- 1.5tsp ground mixed spice  
- 2 apples

1. Place the first two ingredients for the topping toffee into a saucepan and melt on a low heat

2. Once the mixture has melted, pour it into your baking tin, mine is approx 10x6.5"


3. Thinly slice your first apple and place it on top of the toffee and set the baking tray aside

4. Moving onto the cake mixture, you will need preheat the oven to 180°C and beat the sugar and butter together until light and creamy

5. Add the eggs one at a time, beating the mixture between additions

6. Mix in the flour, baking powder, bicarbonate and mixed spice. While this is mixing remove the skin and grate the remaining two apples

7. Lastly add the grated apples and give the mixture one final mix by hand to evenly distribute the apples 

8. Pour the cake mixture on top of the toffee and sliced apples and bake in the oven for about 30 minutes

9.When the cake is finished baking, place it upside down on a cooling tray (apple side up) and allow to cool before slicing and enjoying!
