Raspberry Jam & White Chocolate Biscuits



Hello Everyone!
Firstly I wanted to say a HUGE thank you to everyone that completed my survey for a college assignment, much appreciated! Now back to the blog post, today I have a post for these super simple (and delicious) biscuits; they make the perfect afternoon snack and they don't require any unusual, run-to-the-shop ingredients
So let's get started...



You will need:

  • 115g butter
  • 100g caster sugar
  • 1 egg yolk
  • 1tsp vanilla extract
  • 175g plain flour
  • pinch of salt
  • some jam raspberry jam
  • 70g white chocolate

1. The first thing to do is preheat your oven to 180°C and line two baking trays with some baking parchment

2. Beat the butter and sugar together until combined, light and fluffy

3. Add the egg yolk and vanilla, mix again

4. The last mixing step is to add the flour and salt, this should form a smooth biscuit dough

5. Take roughly 15g balls of dough and place onto your tray, placed reasonably apart

6. Using either your finger or the back of a half teaspoon spoon, make an indentation into the centre of each biscuit



7. Pop into the preheated oven for just five minutes

8. After the five minutes, remove the biscuits and press down on each indentation again. Then fill each hole with the raspberry jam and return to the oven for another eight minutes



As these biscuits are quite small they don't need much time at all to bake so make sure you keep an eye on them. If you make them a bigger size, after adding the jam bake them until they get a light golden colour at the edges. Check them every five minutes or so to avoid burning them

9. Remove the biscuits from the oven and place on a wire tray to cool

10. Melt the white chocolate while the biscuits cool. You can use a piping bag or just a spoon to drizzle the chocolate over all the biscuits
