Things are finally getting spooky here on the blog! To kick off some Halloween bakes, I decided to start simple but effective. What better way to do this than some mint chocolate cobweb biscuits?
So let's get started...
You will need:
- 225g butter
- 140g caster sugar
- 1 egg yolk
- 250g plain flour
- 25g cocoa powder
- 175g icing sugar
- 1-1.5tbsp water
- 1 tsp peppermint extract
- black food colouring
1. Beat the butter and sugar together until light and fluffy, then add the egg yolk and mix again
2. Sift in the flour and cocoa powder until you have a well combined dough
3. The dough needs to chill for 30-60 minutes in the fridge. However I made this dough late in the day and left it in the fridge overnight
4. Preheat the oven to 180°C and line two trays with silicone baking paper
5. Take a circle cookie cutter and transfer the biscuits onto the tray, make sure to place these a part as they will spread in the oven
6. Bake for about 15 minutes, remove and leave the biscuits to cool on a wire tray
7. Sift the icing sugar into a bowl with the water and peppermint extract, mix together until all icing sugar lumps are gone
8. Spread the white icing all over the surface of each biscuit
9. Add black food colouring into the remaining icing, and fit a piping bag with a small round tip or cut the edge off of the bag to create a small hole
10. Pipe a swirl of black icing on each biscuit, starting from the centre out
11. Take a cocktail stick and draw it through the icing from the middle to the edge. I alternated on the biscuits between close together lines and further apart ones (see photos)
