Checkerboard Cake

Hello Everyone,
Welcome back to my blog! Today's post is for a mini checkerboard drip cake that I made to celebrate my birthday with some family. I was really happy with how this cake turned out and you can also alternate the colours to make it look less like a Battenberg cake
So let's get started...



You will need:

  • 250g caster sugar
  • 250g butter
  • 350g self raising flour
  • 4 eggs 
  • 60ml milk
  • pink and yellow food colouring
  • 4 six inch cake trays
  • 3" circle cutter
  • 2cm circle cutter
Decorating:

  • 200g butter
  • 400g icing sugar
  • 20g milk
  • 150g white chocolate

Method:
1. Preheat your oven to 180°C and line your trays with silicone paper

2. Beat the sugar and butter together until they are incorporated and soft

3. Add two eggs, half the flour and mix again

4. Add the remaining eggs and flour and mix until you have a smooth cake batter

5. Splash the milk in to soften the mixture

6. Separate the mixture into two separate bowls, add the pink food colouring to one bowl and the yellow food colouring to the other bowl
 

7. Fill the four cake tins, two yellow and two pink and pop into the oven for about 20 minutes 

8. Allow the cakes to cool before cutting them

9. To make the icing put the sugar and butter into a bowl with the milk and mix until soft and smooth, set aside for later

10. When the cake is cooled, take one layer and cut out the centre using the 3" cutter, then cut out the centre of the cutout using the 2cm cutter. Repeat this for every layer

11. To assemble the layer, take a pink cake ring and place a yellow 3" ring inside, then place a pink 2cm cutout inside. Repeat this process for the alternating layers 


12. Stack the layers together with some icing in between, and cover the whole cake in the remaining icing


13. Melt the white chocolate and pour in on the top of the cake, gently pushing it to the sides so it can drip down 

 

And you're finished!
