Valentine's Cookie Sandwiches

Hi Everyone!
Happy Valentine's Day to those celebrating, and happy Sunday to those that are not. If you're looking for a last minute, tasty and wow-worthy treat, you've come to the right place! These cookie sandwiches are perfect for any occasion really, but their bright pink colour makes them the ideal Valentine's snack
So let's get started...



You will need:
  • 63g double cream
  • 100g white chocolate
  • 200g butter
  • 100g caster sugar
  •  300g plain flour
  • 100g white chocolate chips
  • pink food colouring  
1. Place the double cream into a saucepan and bring to the boil. Remove the pan from the heat and stir in the white chocolate until the mixture is combined

2. Leave the cream and white chocolate mix aside, as it needs to cool and solidify

the filling before it cools
 3. Preheat your oven to 170°C/gas mark 4 and line a baking tray with some parchment paper

4. Beat together the butter and sugar until light and fluffy

5. Add the flour and chocolate chips and lightly mix again

6. Add some food colouring and mix until the colour is evenly distributed

7. Gather the dough and separate it out into 20g balls, I managed to get 36 dough pieces from this mixture

8. Flatten the dough pieces with your fingers and place onto the tray. These biscuits don't spread much at all, so they can be placed fairly close together


9. Bake for 12 minutes and allow to cool on a wire rack. While the cookies are cooling you can pair them up so that you'll have 18 cookie sandwiches


10. When the cookies have completely cooled, take a knife or spoon and spread some of the cooled chocolate filling onto the base of each pair and sandwich them together
