Welcome back to my Diet Friendly Fridays series :D Since my last two blog posts have been cookie related, I decided why not post yet another cookie post, but make it one that nearly everyone can enjoy! Therefore I have this delicious recipe for gluten, dairy and egg free cookies, which are of course also vegan.
So let's get started...
You will need:
- 50g ground almonds
- 60g cornflour
- 100g rice flour
- 125g light brown sugar
- three quarter teaspoon baking powder
- half teaspoon bicarbonate of soda/ baking soda
- pinch of salt
- 1tsp cinnamon ( you can do half a teaspoon or less if you're not a big cinnamon fan)
- 75ml olive oil
- 1.5tsp vanilla essence
- 4tsp honey
- half a mashed banana
- 120g sultanas
- 15ml orange juice
- 50g icing sugar
2. Mix together the oil, vanilla, honey, mashed banana and water, don't worry if these don't completely blend together, as there is no emulsifier present
3. Next mix in the ground almonds, cornflour, rice flour, sugar, baking powder, bicarbonate, salt and cinnamon
4. When the mixture has started to come together you can add in the sultanas and mix the mixture for a bit longer until the sultanas are evenly distributed
5. Place one tablespoon of mixture per cookie onto the tray. The mixture will still be quite sticky and more like a batter than a dough
6. Bake your cookies in the oven for 10minutes. By using a tablespoon of mixture per cookie, I managed to get 25 cookies from this recipe
7. While the cookies are cooling, it's time to make the icing
8. Place the orange juice and icing sugar into a bowl and mix together until smooth
9. Take a spoon and drizzle the icing over the cookies
And you're done!
