Pumpkin Cupcakes with Spiced Maple Frosting


Hi Everbody!
Welcome back to another autumn-inspired post. This year I was determined to get my hands on some pure pumpkin flesh without having to actually scoop it out of a fresh pumpkin. While canned pumpkin seems to be readily available in the US for about $2, this is definitely not the case here in Ireland. I took a trip to a specialised american sweet shop and got myself a can of Libby's Pure Pumpkin for a staggering 4.95!  However I think it was completely worth it for the baking and festive sake. The idea I had in mind was a pumpkin based cupcake topped with some appropriately spiced buttercream
