Cookie Pops


Hi Everyone!
This week I'm back with yet another cookie-related post. This recipe for cookie pops is quite simplistic, so it's great to make with children, and it's also a perfect party favour!
So let's get started...

You will need:
  • 200g butter
  • 100g caster sugar
  • 300g self-raising flour
  • 150g white chocolate chips
  • star shaped cookie cutter
  • cake pop sticks (make sure they're oven safe and won't melt)
  • 20g butter
  • 40g icing sugar
  • food colouring of your choice, I used ProGel in the shade Sky Blue
1. Preheat your oven to 170°C/ gas mark 4 and line a baking tray with parchment paper

2. Beat together the butter and sugar until light and fluffy

3. Mix in the flour and chocolate chips until a dough forms

4. Lightly mould the dough into a ball and roll out until approximately 1cm thick. It's important that the biscuits are quite thick, so that they don't break when the sticks are inserted

5. Take your star cookie cutter, cut out the cookies and insert a cake pop stick into the bottom of each cookie. The dough will be delicate and may crumble if you're not careful when placing the sticks into it

6. Pop your cookies onto your lined tray and bake for 12 minutes. You'll know the cookies are baked when they have started to turn a light golden brown colour


As the cookies bake they will spread and lose their shape a bit, so make sure to place them apart. The cookie cutter I used was about 2.5" and I managed to make 24 cookies


7. When your cookies come out of the oven, place them onto a wire rack and allow them to cool

8. While they are cooling, you can prepare the icing, which will be used to make a boarder on the cookies and add some colour

9. Place the 20g butter and 40g icing sugar into a bowl, with some of the food colouring and mix until everything is well combined

10. Place the icing into a piping bag, I prefer to use disposable piping bags, and cut the tip off the bag to create a hole. It's better to cut a small hole and then make it bigger if needed

11. Now you can either pipe a simple border like I did, or you can get creative with your piping and do different designs/patterns; whatever your heart desires :)
