Shining Star Biscuits


Hi Everyone!
Today's post is a little different as it was made with my younger cousins and it's for these shining star biscuits. These are the perfect thing to make with children and they're great for hanging on the Christmas tree or leaving out for Santa :)
So let's get started...

You'll need:
  • 50g dark brown sugar
  • 50g butter
  • half an egg 
  • 115g plain flour
  • 15g cornflour
  • tsp ground mixed spice
  • lined baking tray
  • rolling pin 
  • small circle cookie cutter, just larger than the sweets you have
  • boiled sweets, one per biscuit
  • star shaped cookie cutters (really you can use any shape you fancy)
  • straw
  • string/ ribbon
1. Preheat your oven to 180°C / gas mark 4

2. Beat together the butter and sugar until well combined

3. In a second bowl beat the egg and then pour half of it into the sugar and butter and mix again

4. Add the flour, cornflour and mixed spice and mix until a dough can be formed

5. Roll out the dough, cut the biscuit shapes and place them onto the lined tray.

6. Take the small circle cookie cutter and cut out the centre of each biscuit

7. Place a boiled sweet into the centre of each biscuit and use the straw to cut a small hole out of the top of each biscuit


 8. Pop the biscuits into the oven for about 10 minutes, making sure to check on them

9. When the biscuits are out of the oven, leave them to completely cool on the tray to make sure the centre is set

10. You can then cut off small pieces of ribbon and tie them through the hole of each biscuit to form a loop

And you're done!
If I'm being honest I think these biscuits are much better as decorations, because eating them is similar to biting into a lollipop! However the kids had a great time making them and were very proud of their creations.
