Five Layer Rainbow Cake


Hello Everyone!
This week's post is for a rainbow cake. It seems like everyone has already perfected and posted their own version of this cake; however this was only my first time making this cake. Therefore I thought I'd give it a try and share my take on the cake :-)

So let's get started...


You will need:
  • 350g self raising flour
  • 250g caster sugar
  • 250g butter
  • 4 eggs
  • 60ml milk
  • red, orange, yellow, green and blue food colouring
  • layer cake 5 piece set
  • 250g butter
  • 500g icing sugar
  • 40ml milk
  • sprinkles (optional)

1. Preheat your oven to 150°C and line each of your baking tins with some silicone paper. The low oven temperature causes little to no browning on the cakes, so they retain their vibrant colour

2. Place all the cake ingredients into your mixing bowl and beat until incorporated and smooth

3. Separate the mixture into five bowls (215g per colour worked well for me), add the various food colourings to each bowl and mix until the colour is evenly distributed

4. Place the mixtures into the baking tins and pop into the oven for approx 20mins

While the cake layers cool, it's time to make the icing:

1. Beat the butter for 5-10 minutes, this will help to make the icing appear more white rather than yellow in colour

2. Add the icing sugar and milk, mix again until the icing appears smooth and creamy

3. Place and spread spoonfuls of icing in between each cake layer to sandwich them together 


4. Spread the remaining icing on the top and sides of the cake

5. If you feel like jazzing up the exterior of your cake you can add some sprinkles to the top and top sides 
ooh ahh

And you're finished!

All that's left to do is slice the cake, be amazed at the pretty layers and enjoy :) Thank you for reading and I'll see you again soon!
