This week's post is all about Easter. I wanted to make some treats that consisted of a basic base recipe, but have fancy yet cute decorating. This resulted in three different ideas!
So let's get started...
Easter Cupcakes:
- 85g butter
- 100g caster sugar
- 2 eggs
- 2tbsp milk
- 225g self raising flour
- 25g cocoa powder
- cupcake tray
Option 1: Easter Nests
- 100g butter
- 200g icing sugar
- 1tsp cocoa powder
- candy coated chocolate eggs
- 1-2 crushed flake bars
Option 2: Easter Egg Hunt
- 100g butter
- 200g icing sugar
- green food colouring
- grass piping tip
- chocolate foil covered eggs
1. Preheat your oven to 200°C and place your cupcake cases into a tray
2. Beat the caster sugar and butter together until combined and fluffy
3. Add in the eggs, one at a time
4. Pour in the milk
5. Mix in the flour and cocoa powder
6. Place the mixture into the cases and pop into the oven for about 20 minutes
7. Now that your cupcakes are made and cooling you can start to prepare the icing. Beat the icing sugar and butter together until smooth and creamy
8. Split the icing into two bowls. For the nest cupcakes, add the cocoa powder to the icing
9. Spread some of chocolate icing on top of half the cupcakes with a knife
10. Fill a piping bag with the rest of the icing and pipe a ring around the cupcakes as pictured
11. Place some candy coated eggs into the centre of the ring
12. Crumble up the flake bar, sprinkle onto the ring/nest and you're done!
13. For the egg hunt biscuits, add some green food colouring to the icing and fill a piping bag with a grass tip
14. Cover the top of each cupcake with the "grass", place some chocolate foil eggs on top and you're done!
Easter Bunny Biscuits:
You will need:
You will need:
- a batch of my go-to biscuit dough
- circle cookie cutter
- 140g icing sugar
- 7tsp water
- pink food colouring
- black ball sprinkles
- white ball sprinkles
2. To make the icing, simply add a teaspoon at a time of water to the icing sugar, and mix until you have your desired consistency
3. Dip the face of each biscuit into the icing, and while the icing is still tacky place two black sprinkles onto the bottom of each biscuit for the bunnies' eyes
4. When all the biscuits have been covered and the icing has solidified a bit, place the some of the remaining icing in a piping bag and squirt a circle of icing at the top of each biscuit. Then sprinkle the white ball sprinkles onto the circle of icing to represent the bunny's tail
5. Finally with the leftover icing, add some pink food colouring and pipe the bunnies' ears and noses
And you're done!
