Caramel Cups

Hi Everybody!
This week's post was inspired by an idea I saw on Pinterest and it's for caramel cups. These are basically caramel squares made into bite-sized circular cups and they are delicious! These took a while to make as there's quite a few steps
So let's get started...


For the biscuit base you will need:
  • 115g butter
  • 85g caster sugar
  • egg yolk
  • 200g plain flour
  • Cupcake tray
  • Round cookie cutter the size of the holes on the muffin tray

1. Preheat your oven to 200°C and place a small circle of parchment paper into each cupcake hole 

2. Beat together the butter and sugar until light and fluffy

3. Mix in the egg yolk and flour until a dough begins to form

4. Roll out the dough, you should be able to cut out 12 circles, depending on your cookie cutter size

5. Carefully press the dough circles into the cupcake holes and against the edges, so they form a cup


6. Bake these in the oven for about 10-15 minutes

7. When they're out of the oven, allow them to cool and then make sure none of them have stuck to the tray before you put caramel in them!

To make the caramel you will need:
  • Can of condensed milk 
  • 125g butter
  • 75g soft brown sugar
  • 50ml golden syrup 

1. The caramel is super easy to make, simply place all the ingredients into a saucepan on a low heat until they all melt

2. Increase the heat to medium and stir continuously until your caramel looks somewhat like below

3. Pour about 1.5 teaspoons of the caramel into each cup. You want the caramel to go up to the top of the cup but still have room for the chocolate


4. Lastly take about 150g of milk chocolate and melt it

5. Spoon the chocolate on top of each cup until the biscuit is covered. Don't pour too much chocolate as it will stick to the tray and you either won't be able to get the cups out, or they will come out but they'll be missing chocolate on the top from where they got stuck!


Allow them to set and you're finished!
